Some Indian Food recipes and Kitchen Tips

Tips on Indian Cooking

When I started cooking first I had to learn everything by trial and error. These are some of my recipes for my daughters who are both newly married [:-)] whenever they feel nostalgic for Mom's cooking. Others are also welcome !

Paneer Matar

Cut 100 gm paneer (cottage cheese) into small cubes.
Fry it lightly in veg oil till lightly browned and put them in warm water to keep them becoming hard. Keep aside.

Heat 2 tsp veg oil (you can use the leftover from the above procedure. Add more and/or ghee too, if you want a richer look and taste).

When it is hot, crackle a tsp of jeera in it.

Add 2 finely chopped onions and 1 slit green chilli Saute till golden brown. Add 1 tsp of ginger-garlic paste and saute further till raw smell goes off.
Add 1 tsp chilli powder, 2 tsp coriander powder, 1/2 tsp of turmeric powder and 1 tsp garam masala. Saute on low heat for one minute.

Add 2 big tomatoes, pureed (or add 2 tb sp readymade tomato puree) and 1 cup of fresh green peas.

Stir well till the oil separates.

Add 1 cup of hot water and simmer till peas are almost cooked, for a few minutes.

Add the fried paneer cubes after draining the warm water.

Simmer for one more minute and take it off the heat.
Some people add 2 tbsp of fresh beaten cream as garnish at this stage, to give the yummy taste kids like. But skip this if you want to save yourself from ingesting unwanted calories! Without cream also the curry tastes nice.
Garnish with fresh coriander leaves.
